		<description>My name is Courtney Jones and I am one of the co-owners of the Fat Cactus. We are a new trailer on South Congress and Gibson, specializing in Navajo Fry Bread Tacos. We wanted to reach out to all the awesome Austin foodies to introduce ourselves.

We are trying to establish that we are not your ordinary taco trailer. A Fry Bread taco is native to the Southwest (New Mexico, Arizona, Colorado), but we have brought it here to Austin with the intent of providing a new type of taco experience to the people. A Fry Bread taco is more like a puffy taco/ sopapilla-esqe in texture. We use fresh ingredients such as grass fed ground beef, hormone free chicken, and fresh organic veggies. We top off our tacos with a made from scratch New Mexico red chile sauce or made from scratch hatch green chile sauce. We also have incorporated the tacos into pizzas. Same dough, but crisped up in a pizza oven. One of our most popular is our Foghorn Chicken Pizza. It is Navajo Fry bread, cilantro-pumpkin seed pesto, chile rubbed chicken, red onion, goat cheese, and toasted pepitas.

We also make our own green chile queso and green chile hummus, as well as a cilantro lemonade. We just wanted to introduce ourselves and ask for your help in spreading the word about us. Or even better come by and try for yourselves!!!
